Pumpkin Chocolate Chip Muffins

 Makes: 10-12 


WET INGREDIENTS: 
1 cup organic pumpkin pure (not pumpkin pie!)
1/4 cup melted coconut oil
1/4 cup pure maple syrup
1/4 cup coconut sugar
1 flax egg or 1 real egg
1 tsp vanilla extract


DRY INGREDIENTS: 
2 cups gluten free oat flour (or oats blended in a blender until a flour-like consistency)
1/2 cup almond meal/flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp cloves
1/2 tsp ground nutmeg
1/4 tsp salt
1/2 cup chocolate chips


INSTRUCTIONS: 
Preheat the oven to 350 degrees and spray a muffin tin with non-stick spray.
In a bowl combine the wet ingredients. In a separate bowl, combine the dry ingredients. Then combine the two together. Stir in 1/2 cup chocolate chips.
Bake for about 23 minutes or until the middle is cooked through. Test with a fork to ensure it comes out clean and not gooey!
