Classic Peanut Butter Cookies
Makes: 12-14 cookies
1 egg or 1 regular egg
1 tsp vanilla extract
1/4 cup raw organic honey
3/4 cup peanut butter (local, without added sugar or oil is best!)
2 tbsp coconut sugar (or 2 additional tbsp of additional honey in place)
3/4 cup almond flour
1/4 tsp sea salt
2 dashes of nutmeg
1/4 tsp cinnamon
1/4 tsp baking soda
Preheat your oven to 325 degrees. Whisk together the egg/flax egg, vanilla extract and honey.
Add in peanut butter and mix throughly.
Fold in the dry ingredients and mix all together until smooth.
Using a cookie scoop or a spoon, scoop dough into a ball shape, rolling between your hands.
Place on a parchment lined baking sheet.
Using a wet fork, press the cookie down at an angle gently to create the criss cross marks.
Continue to rinse your fork to prevent sticking.
Bake for 14-16 minutes until golden brown.
Remove from the oven and top with additional sprinkle of sea salt.
