Pumpkin Fig Newtons


1 1/4 cup dried figs
1/2 cup pumpkin pure
1/4 cup nut milk
1 tbsp pure maple syrup
1/2 tsp cinnamon
1/2 tsp pumpkin pie spice

2 cups almond flour
3 tbsp coconut flour
1 tbsp coconut sugar
1 tsp cinnamon
1 tsp pumpkin pie spice
pinch of salt
1/2 tsp baking soda
1 tsp baking powder
3/4 cup pumpkin pure

Preheat the oven to 350 degrees. Add filling ingredients to a food processor and blend into a paste. Set aside.
In a mixing bowl, combine the crust into a dough. Spread half of the doughy crust on the bottom of a baking dish. Spread the filling and then the rest of the crust on top.
Bake for 30 minutes. Let them cool and store in the fridge!
