Paleo Chunky Granola

INGREDIENTS:
1 cup unsweetened coconut flakes
1/2 cup almonds, chopped
1/2 cup cashews, chopped
1/2 cup pecans, chopped
1/2 cup almond flour/meal
1/4 cup pure maple syrup
1/2 tsp cinnamon
pinch of salt

INSTRUCTIONS:
Preheat the oven to 325 degrees and line a baking sheet with parchment paper.
Combine all ingredients in a bowl. Using a spatula, mix well.
Pour out into the baking sheet and spread out, pressing down as you do so. This will help clusters form!
Bake for 15 minutes. Remove form the oven and gently flip the granola, making sure to keep some clusters intact!
Bake for an additional 5-10 minutes until granola is golden brown and just slightly soft.
Allow to cool for 30 minutes or until completely cooled.
Store in an air tight container for 1-2 months at room temp.
