Chocolate Zucchini Bread Bites
MAKES: 10 slices (or chop into bites and freeze!)
1 ¼ cup oat flour (ground up GF oats in blender)
¼ cup + 2 tbsp organic cocoa powder
¾ baking powder
½ tsp baking soda
¼ + 1/8 tsp salt
1/3 cup unrefined coconut sugar or stevia
1 packed up grated zucchini
¾ cup greek yogurt
¼ cup coconut oil
1 tbsp pure vanilla extract
1/3 cup vegan (or regular) chocolate chips
Preheat the oven to 350 degrees. Grease a 9x5 loaf pan (*could possibly use a regular brownie pan as it does “fluff” up very high!)
Stir all dry ingredients in a large mixing bowl.
Add in remaining ingredients and stir to form batter. Smooth into loaf pan.
Press some extra chocolate chips on top if desired.
Bake on the center rack for 35 minutes.
Let it cook completely, then loosely cover and refrigerate or freeze for longer lasting bites!
*Flavor and texture gets even better the next day!
