Coconut Flour Maca Pancakes
SERVES: 1 MAKES: 4
2 tbsp coconut flour
2 tbsp millet flour (or other gluten free flour of choice)
1 tbsp maca powder
1 tsp stevia
1/2 tsp baking powder
1/2 tsp ground cinnamon
1/4 tsp salt
2 eggs (or flax eggs if vegan)
3 tbsp almond milk (or other nut milk)
2 tbsp greek yogurt
Frozen fruit or fresh berries for topping
In a small mixing bowl, combine coconut flour, second flour option, mace powder, cinnamon, stevia, baking powder and salt. Stir and ensure there are no clumps.
Crack in the eggs and add in the nut milk. Whisk together to form a smooth, thick batter. If the batter is too dry and thick add a tbsp of more nut milk, if it is too wet add another tbsp of coconut flour (it absorbs quickly so you may have add more depending on the thickness).
Heat a non-stick pan on the stove over medium heat ands pray with coconut oil spray. Spoon in batter to form a single pancake.
Cook until little bubbles form in the batter, the flip over and cook until through!
While pancakes are on the stove, defrost fruit in the microwave until the berries become a "puree" or slightly soft. If using fresh berries, mash until a saucy texture forms.
Serve pancakes with a dollop of greek yogurt and fruit!
