Crock Pot Greek Chicken Lettuce Wraps
2 organic, skinless, chicken breasts
Baby tomatoes, sliced in half
¼ diced red onion
Leaves of romaine Lettuce
TZATZIKI SAUCE INGREDIENTS:
1 cup Greek Yogurt
½ shredded drained cucumber
1 tbsp olive oil
1 raw garlic minced or 1 tsp garlic powder
½ tsp salt
1 tbsp fresh dill
1 tbsp squeezed lemon
Spray the bottom of your crock pot with non-stick spray and place two chicken breasts on the bottom of the pot. Season with salt and pepper and turn on to cook on high for 4-6 hours.
Once chicken is done, take out of the crock pot and shred with two forks and put into a big mixing bowl.
For the sauce, grate ½ cucumber into a small bowl. Grab a paper towel and cover the cucumber. Press down into the bowl with your fist until you get out all the excess water out. This may take a few times! Try to get as much water out as possible otherwise your sauce will be watery.
Stir in the Greek Yogurt and all spices with the grated zucchini.
Add the Tzatziki sauce to the bowl of chicken and mix well.
Sliced up tomatoes, cucumber and red onion for topping.
Layout lettuce leaf and assemble the chicken salad and top with chopped veggies.
