Sweet Potato Pie Smoothie
3 sweet potato rounds, frozen
2 boiled carrots
1 tbsp flaxseed
1 tbsp almond butter, sunflower seed butter or cashew butter
1 tsp vanilla extract
1 scoop Nuzest vanilla protein powder or collagen powder
1 tsp maca powder (optional)
1 tsp cinnamon
½ tsp ground ginger
dash of nutmeg
1 cup unsweetened nut milk
Cook off whole sweet potato in the microwave for about 3-4 minute or until soft, then slice into rounds. Or slice sweet potato into rounds first and bake in the oven at 400 degrees for at least 20 minutes. Let cool and use right away, or freeze overnight to use when you're ready to make the recipe.
While the sweet potato is cooking, boil off a few carrots on the stove top until fork tender. Just like the sweet potatoes, you can use the carrots off the stove once they have cooled down or cook them off and freeze them over night.
Add all ingredients to a blender and blend until smooth. Serve with additional coconut flakes, cocoa nibs or hempseeds on top!
