Cauliflower Gnocchi with Turkey Bolognese
1 bag Trader Joe's frozen Cauliflower Gnocchi
1 tbsp extra virgin olive oil or grass-fed ghee
1 lb organic lean ground turkey
1/2 white onion, chopped finely
2 cloves garlic, minced
1 + cup marinara sauce (I use Lucini - check for a brand with clean ingredients, no chemical additives and without sugar)
Fresh basil leaves
Heat 1 tbsp of olive oil or ghee in a large skillet. Add chopped white onion and saute until soft, about 3-4 minutes. Add in the garlic and saute for a few more minutes.
Add the ground turkey, and cook, breaking it up with a spoon until it starts to brown. Seasonw its salt and pepper and then add in the marinara sauce and stir to coat meat and onion mixture. Reduce the heat and let it lightly simmer while you cook the gnocchi.
In a separate skillet, heat 1 tbsp of olive oil or ghee over medium heat. Add frozen gnocchi straight from the freezer bag into the skillet. (Hint- don't follow the package directions. It will tell you to add water! Leave this out.) Saute them in the skillet for 10 minutes, or until the gnocchi is brown on each side.
Divvy up into bowls and garnish with parm cheese (if you chose) and a little torn basil leaves!
