Banana Oat Pancakes

Serves: 3 Makes: 9-10 cakes

INGREDIENTS:

2 cups oats (gluten free or regular)
2 medium ripe bananas
2 large eggs (or 2 flax eggs; 2 tbsp ground flaxseed + 6 tbsp water)
1/4 cup unsweetened nut milk
1/4 tsp salt
1/2 tsp cinnamon
1 tsp vanilla extract
1 1/2 tsp baking powder
Non-stick cooking spray
*optional 2 scoops Collagen or Plant Protein Powder
*optional chocolate chips, blueberries, banana slices, coconut shreds, nut butter, pure maple syrup or honey on top 

INSTRUCTIONS: 

If making vegan version, whisk together flax egg and set aside. 
Place all ingredients in a blender, including the flax eggs and blend on high until complete mixed together, about 1-2 minutes. 
Heat a pan over medium heat and spray with cooking spray. 
Pour batter into pan and cooking about 2-3 minutes on each side or until the batter bubbles slightly and the edges turn a little brown. 
Serve with toppings of choice!
