Summer Watermelon Side Salad

Serves: 3-4 

INGREDIENTS:

3-4 cups mixed greens
1 avocado, diced
1/3 cup white onion, diced
1 1/2 cups watermelon, sliced into chunks
1/3 cup pecans or walnuts, chopped

DRESSING INGREDIENTS:

2 tbsp Extra Virgin Olive Oil
1 tbsp Apple Cider Vinegar
Squeeze of fresh lemon
1 tsp raw organic honey
pinch of salt

INSTRUCTIONS: 

Place mixed greens in a large bowl. 
Remove skin from the avocado and onion and dice into suggested amounts. Add them to the bowl of mixed greens.
Then add the watermelon and the nuts of choice. 
Whisk the dressing together and serve a tablespoon over teach serving size.
