Thai Turkey Burgers


Serves: 2-3

1 lb lean ground turkey
1 tsp curry powder
1 tsp dried basil (or fresh)
1 tbsp fresh chopped cilantro
1 tsp turmeric
Pinch of salt/pepper
1 medium carrot, diced finely
Fresh spinach, arugula or bok choy

Squeeze of fresh lime
2 tbsp sunflower seed butter or almond butter
Few drops of coconut aminos
Hot water to thin
Small drop of pure maple syrup *optional
Sprinkle of crushed red pepper *optional

Heat a skillet over medium heat on the stove top and spray with non-stick spray.
Combine the first list of ingredients for the burgers in a large bowl and mix well with your hands. Form into 8 small patties or 6 larger ones.
Cook the patties until middle is cooked through, flipping over half way.
Mix the sauce in a small serving dish until well combined. Add more hot water to thin it out as much as you desire. Taste and adjust if need be! You may also omit the lime and coconut aminos and simply use the nut butter as a spread!
In another little skillet over medium heat, lightly sauté the spinach, arugula or bok choy until done to your liking (aim for not raw but not overly mushy!)
Place spinach down on a plate with 2 turkey burgers and 1 tbsp of the nut spread.
