Butterfinger Bites

INGREDIENTS:

3/4 cup sunflower seed butter (I love the Sunbutter brand or use any nut butter of choice)
2 tbsp honey (raw/organic or local if possible!)
8-10 dates, pitted and soaked in warm water for a few minutes
2 tbsp coconut flour
3/4 cup crispy brown rice cereal (look for minimal ingredients! I like Erewhon brand from Whole Foods)
1/2 tsp vanilla extract
1 cup dark chocolate or vegan chocolate chips, melted + 1 tbsp coconut oil to help it melt even more so!

INSTRUCTIONS:
Blend everything but the chocolate together in a food processor until a doughy consistency.
Roll dough into bite size balls and place on a baking sheet.
Pop the sheet pan into the fridge for atleast 30 minutes.
Melt the chocolate and coconut oil together and either dunk or drizzle on top of each bite!
Store in an air tight container in the fridge.
