Tofu Scrambled Eggs

INGREDIENTS:

1/2 block extra-firm NON-GMO, Organic Tofu
garlic powder
onion powder
salt/pepper
ground cumin
ground turmeric
Veggie broth

Veggies of choice: bell pepper, onion, zucchini, spinach

INSTRUCTIONS:

Remove tofu for the packaging and place onto papertowels. Cut in half and then in half again.
Place paper towels on top of the tofu and press down to squeeze out excess water, getting out as much as you can!
Heat a skillet over the stove stop on medium heat. Add the tofu and season with all spices - adding as much or as little as you’d like.
Add in your chopped veggies and spray with non-stick spray over top and season with a little more salt.
Add in 1- 1 1/2 tsp ghee, continue to mix around until well incorporated.
When tofu is slightly browned and veggies are cooked, remove from the stove top and serve!

In the picture I served with 1 slice GF/Vegan Toast topped with mashed avocado.
