PB & J Oats

INGREDIENTS:

1/2 cup Gluten Free Quick Oats, soaked overnight (or atleast 30 minutes if you have time) in filtered water
1/3 cup frozen mixed berries
1 scoop vanilla plant protein powder
1 tbsp nut butter (almond/cashew/sunbutter)
Splash of nut milk (I prefer light canned coconut milk)

INSTRUCTIONS:

Heat a small pan on the stove over medium heat and add the frozen berries. Let them melt for a few minutes. Mash them with a spatula as they heat up.
Pour in your soaked outs (with the water they were soaking in) into the pan with the berries. Stir and cook for a few minutes, add more water if need be! Bring to a slight boil and simmer until soft, about 3 more minutes.
Remove from the heat and stir in the protein powder. Add the splash of milk if need to smooth out.
Top with nut butter.
