Summer Salmon Salad

INGREDIENTS:

Romaine lettuce, chopped
1/8 cup red onion, chopped
3/4 can wild caught Salmon, drained
handful sugar snap peas, chopped
1/2 cup strawberries, sliced
1/4 mashed avocado
Salt/pepper
1 tbsp Primal Kitchen Greek Dressing (or replace with olive oil / lemon dressing)

INSTRUCTIONS:

Drain the salmon and place into a bowl. Save the extras in an airtight container in the fridge.
Add avocado to the salmon and mash together. Season with salt and pepper.
Chop and cut all veggies and strawberries and toss together in a bowl.
Add the salmon/avocado mixture on top with a light drizzle of dressing.
