My Favorite Greek Salad
1 Grilled, organic chicken breast
2 cups Romaine lettuce, chopped
1/8 cup Red Onion, chopped
1/3 Cucumber, chopped
3-4 Sun-dried tomatoes, sliced into strips (drained from olive oil and patted dry)
8-10 Black kalamata olives
1/4 diced avocado
1 tbsp Primal Kitchen Greek Dressing
Heat the grill and cook off chicken about 7 minutes on each side.
Meanwhile, chop all veggies and toss together into a big bowl.
Top with grilled chicken and drizzle dressing over top.
