5 Things to Meal Prep for Next Week!

Meal Prep is about being prepared to ensure your busy week ahead goes smoothly and you can stay right on track with making healthy choices! I personally don’t like to eat the same thing every day so I create “side” dishes or a bunch of things to throw together to create a meal. That’s what I did this week, you should totally try it! These recipes are all super easy plus scroll to the bottom to see the step-by-step instructions on how to maximize your time spent in the kitchen.

A few slight adjustments I made to the recipe above : added a pinch more onion power and did about 1.5 tsp of cumin for extra flavor. I also used Cassava flour since it is one of the easiest flours to digest yet works just like any other flour when cooking and baking! These are great for breakfast with 2 running eggs on top, added to a buddah bowl or eaten as a dinner side dish.

Here are a few things I changed from the recipe posted above : I decided to use a bag of Broccoli Slaw mix from Trader Joes! Pre-cut and ready to go! (super easy!) I used half of the bag, added 1/2 sliced apple and the same dressing measurements from the recipe. The taste came out perfect! Best part is, this dish stays fresh for a few days in the fridge and the longer it sits, the better it gets! I’ve paired it with a salmon salad and served as a side dish to chicken. Yum!

My mom has always thrown together pasta salads to take to the beach, on the boat, baseball games or a BBQ. It’s the perfect summer dish if you ask me! Light and refreshing yet still so filling. One of my favorite desserts I’ve come up with yet! I legit can’t keep them out of my mouth. Make sure to cut them into bite size pieces so you can try to control yourself ;)

Step-by-Step Instructions:

  1. Preheat your oven to 350 degrees and heat up the grill.

  2. Start with Deb’s Greek Chicken Zoodle Salad as the chicken and pasta will take the longest! Throw the chicken on the grill and start a pot of boiling water for the pasta.

  3. Get another pot of water goin’ on the stove for the Cauliflower Chickpea fritters. When the water reaches a bowl, throw in the cauliflower. Combine the rest of the ingredients for the recipe and set aside.

  4. Finish the zoodle salad, cutting and combing the veggies and dressing together. Drain pasta, let it cool and throw it in the bowl with the veggies. Once the chicken is cooked through, take it off the grill and let it cool completely before adding it in to the pasta/veggie mixture!

  5. Test your boiling cauliflower. When it is easily pierced with a fork, take it off the burner and drain. Set aside to let it cool.

  6. Start on your Chocolate Chip Oat Bars and get them in the oven! Remember to set your timer so you don’t forget about them!

  7. While the bars are in the oven, heat a pan over medium with coconut oil on the stove top. Blend all ingredients for the fritters and finish them in this pan! Set them aside when they are done.

  8. Take a breather and don’t worry - the last few steps are easiest! Combine everything together for the slaw. Put in a bowl, cover it and place in the fridge.

  9. Lastly whisk together the tahini sauce and put that in the fridge to serve with many different things this week!

  10. As the week gets busy, use these dishes to spice things up and bring on more flavor!
