Chocolate Oatmeal Cookie Bars

INGREDIENTS:
1/2 cup coconut oil, melted
2 flax eggs (2 tbsp flax + 5-6 tbsp water)
1/2 cup coconut sugar
1 tsp vanilla extract
1 cup Gluten Free oat flour (ground in a blender)
1 cup Gluten Free Oats
1 tsp baking soda
1/2 tsp salt
1/2 bag Vegan Chocolate Chips (or regular)

INSTRUCTIONS:

Preheat the oven to 350 degrees.
In a bowl, whisk together the melted oil, coconut sugar, flax eggs and vanilla.
Fold in the dry ingredients, except the chocolate chips. Mix well together so there are no clumps!
Add in the chocolate chips and stir.
Spray a 9x9 baking dish and pour in the mixture. Press down well with a spatula until evenly spread out.
Bake for 18-20 minutes (may need a few more minutes) It will still be soft!
Let them completely cool! If you don’t it will end up like a crumble! (Which - is still amazing, especially with vegan ice-cream!)
Put them in the fridge for at least an hour before cutting and serving.
