Vegan Sloppy Joes

INGREDIENTS:

2 Hillarys Eat’s Well Veggie Burgers
2 tbsp ketchup
2 tbsp Worcestershire sauce
1 tbsp coconut sugar
1/2 white onion, diced finely
1 tsp garlic powder
1/2 tsp ground mustard
1/2 tsp salt
1/2 tsp pepper
1 tbsp olive oil
2 sweet potatoes sliced 1/2 inch thick into rounds
Fresh basil

INSTRUCTIONS:

Preheat the oven to 400 degrees.
Slice the sweet potatoes and lay them out on a baking sheet. Place in the oven for about 20-23 minutes until tender and easily pierced with a fork.
While the taters are roasting, heat a pan on the stove top and add olive oil. Once hot add in the onion and the veggie burgers.
Let the burgers start to de-thaw in the pan before chopping using a spatula.
Once finely broken down, add all other ingredients and mix well together.
Pull the sweet potatoes out of the oven and let them cool slightly before serving.
Place the burger/sloppy joy mixture onto of each sweet potato round and serve with a little fresh basil!
