5 Minute Summer Shrimp Salad

Serves: 2

INGREDIENTS:

1 lb Wild Caught Shrimp
2 cloves garlic, minced
1 tbsp Avocado oil
Arugula/spinach mix (or simply one or the other)
Baby tomatoes, cut in half
Red onion, sliced/diced
1/2 Avocado, diced
Fresh dill
Fresh cilantro
2-3 tbsp Primal Kitchen Greek Dressing

INSTRUCTIONS:

Heat a pan on the stove top over medium. Add the avocado oil and once heated, add the minced garlic. Let the garlic become fragrant, about 2-3 minutes.
Add in the shrimp and cook for 2 minutes on each side - watch closely! They cook fast! Over cooking them will make them into a tough texture.
Remove shrimp from the heat and set aside.
Cut and slice all other ingredients and toss into a bowl. Add cooked shrimp on top and 1 tbsp of dressing per serving.
