Protein Pesto Pasta Salad

Serves: 4-5

INGREDIENTS:
2 cups Gluten Free, Protein Pasta (POW Brand, Brown Rice Pasta is my favorite)
Sun-dried or regular baby tomatoes, sliced
Red onion, sliced finely
Handful Fresh basil leaves + few more for adding to the dish
3 Garlic cloves
1 Lemon, juiced
2 tbsp Olive oil
Salt/pepper

*Optional marinated mozzarella balls (these are easy to leave out for a vegan dish or add for those who love dairy!)

INSTRUCTIONS:

Bring water to a boil not he stove top and cook off 2 cups of pasta according to the box directions.
Meanwhile, make the dressing! Blend together the basil, garlic, olive oil, lemon juice, salt and pepper until smooth. Make sure there are no large chunks! Set aside.
Slice the remaining ingredients.
If adding the mozzarella balls, remove for the oil and set aside on a papertowel.
When pasta is finished cooking, drain it and rinse under cold water. Place the pasta in a large bowl.
Add the dressing and remaining ingredients to the pasta and toss.
Lastly, add the mozzarella balls.
Serve at room temp or chill until needed!
