Cucumber Sammies with Avocado Dip

INGREDIENTS:
Uncured deli meat (I buy Trader Joes Turkey Deli or Applegate Uncured ham)
1 large cucumber, sliced thin
1 Avocado
2 cloves garlic
pinch of salt
1/4 cup olive oil
1 lime, juiced

INSTRUCTIONS:
Slice the cucumber thinly and lay out on a serving plate.
Using your hands, tear apart the deli meat, placing a little slice on each cucumber round. Top with an additional cucumber slice to stack like a mini “sammie”.
For the avocado dip, combine all ingredients in a blender and process until smooth.
Enjoy this high protein, beneficial fat, low carb snack or appetizer!
