Pumpkin Oatmeal Blender Pancakes



2 cups gluten free oats
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp pumpkin pie spice
1/2 tsp salt
1/2 tsp cinnamon
1/4 tsp ground cloves
2 whole eggs
1/3 cup nut milk (or light canned coconut milk)
3/4 cup canned pumpkin pure (not pumpkin pie!)
1 tsp vanilla
1 tsp maple syrup

Pure Maple Syrup
Nut butter


Combine everything in your blender and process until smooth. Set aside for about 5-7 minutes to let the batter thicken. Note: This allows the oats to expand and absorb some of the liquid!
Heat your pan over medium heat, spray with non-stick spray and pour your pancakes about 4 inches wide. Let them cook for a few minutes then flip over!
Serve with nut butter or a light drizzle of pure maple syrup.

Tip! These are GREAT fueling breakfast, espcially after a workout!
