Fall Harvest Buddah Bowl with Maple Tahini Dressing
1 medium sweet potato, diced into evenly sized chunks
Brussels sprouts, chopped then thinly sliced
1/2 red apple, diced into chunks
Spinach or kale
1 tbsp Tahini
1 slice fresh Lemon
1 tsp Pure Maple Syrup
1 tbsp chopped walnuts
Spinach of salt
Non-stick coconut oil spray or Avocado oil spray
Protein of choice : chicken, salmon, chickpeas
Preheat the oven to 400 degrees.
Wash and chop your veggies then lay them out on a baking sheet. Spray with non-stick spray and season with salt. Make sure they are evenly spread out so they get nice and crispy!
Chop the apples into chunks and make room on your baking sheet, or use a separate one. Sprinkle with cinnamon. Roast the veggies and apples until soft and fork tender. The brussels should nice and crispy!
If you are cooking a meat, add the chicken or fish to a baking dish and pop into the oven too. Season your protein choice with salt and pepper. Chicken will take about 30 minutes to cook, salmon will take about 10-12 minutes depending on the thickness.
While waiting, mix the Maple Tahini Dressing by combining tahini, lemon, salt and maple syrup in a small dish. Whisk in a little water at a time until a desirable and pourable consistency.
Build your bowl with the greens on bottom, roasted veggies/apples, protein and top with Tahini!
